Eggs

 

I love jammy eggs! Actually, I love all eggs.

We eat a lot of eggs in our house. I love mine either jammy or a little runny. I especially love runny eggs on greens.

Buying eggs is confusing. The cartons are labeled organic, vegetarian fed, grass fed, free-range, cage free, hormone-free, pasture-raised, and even more. If you look up what some of these mean it’s pretty disappointing. “Free range” hens are given access to the outdoors for at least 5 minutes. The outside they are given access to might be mud. Free-range chickens usually live in crowded barns and while they might have the option to get outside, some ladies can’t make it to the door due to crowded conditions.

Eggs that are labeled “organic” are fed organic feed and have access to the outdoors. I doubt they are running free in rich soil with their girlfriends. The issue with this label is chickens don’t normally eat grains and soy. I have bought plenty of these eggs in my life, but recently switched.

The phrase “pasture raised” means that each hen gets about 108 square feet. This square footage must be outside all year long and rotated. Meaning, they need access to new fresh grass, grubs, and bugs.

We try and buy pasture-raised eggs at the store. If you are shopping without kids take a minute and read some of the labels. If you can find local fresh eggs it’s worth it. The color of the yolk alone is dreamy.
