Salad with Scallops
If there is one thing I can grow in my garden, besides weeds, it’s lettuce. Lucky for us, we like salad. During summer I want seafood, fish tacos, fresh salads, herbs, vegetables, and lime juice on everything. Enter this little salad. It also takes about 15 minutes to make.
I am no expert on scallops, but what I do know about them is they are a pretty safe bet when it comes to sustainable seafood practices. They get great scores on Seafood Watch. I did read there can be some questionable labor practices, so know your fishermen.
Nutritionally they are also fantastic. Lots of protein, B12, Zinc, Omega-3 fatty acids making them great brain food.
Ingredients: scallops, lettuce, cilantro, lime, red onion, corn, avocado, radishes, red wine vinegar, olive oil, ghee, salt and pepper.
The corn takes the longest so start there. Grill, boil, sauté whatever you like. I boiled mine, because the kids ate a deconstructed version of this and they like corn on the cob.
Once the corn is in the water rinse off and dry the scallops. You want them totally dry to brown up nicely. I also let them come to room temperature while I prepped the dressing and other ingredients.
For the dressing I used half a lime, a couple splashes of red wine vinegar, and whisked in the olive oil. I should probably have exact measurements, but wing it and live dangerously. I also added some cilantro and onion to the dressing. Finish with salt and pepper to taste. ALWAYS test the dressing before dressing the salad. Make the dressing however you like it.
Once the corn is done I shaved it off the cob, chopped a quarter of a red onion, sliced three good size radishes, one avocado, and put it all on top of lettuce.
With the salad ready it’s time to cook those yummy little sea dumplings. Once they are totally dry get your pan good and hot. I used a cast iron pan with a swirl of olive oil and dollop of ghee. Put your scallops in and don’t move them for 2-3 minutes. Once they are not sticking and browning nicely flip for another 2-3 minutes.
Dress your salad and place the scallops on top. Finish with a little more cilantro and Enjoy!
