On Sunday I try to prep for the week. This includes washing our produce and storing it so it lasts longer, chopping vegetables for snacks and school lunch, making a soup, and maybe a snack or two. Well, not this Sunday. Despite our best efforts to stay well this winter we have been hit with another cold. Even with taking probiotics, elderberry, standing on my head and drinking unicorn tears we couldn’t avoid it. So, the only meal prep I got done was muffins from a box.
I love this brand! It is really clean, not a ton of sugar and gluten free. This is one of those staples I always have on hand in the pantry. Mae added some dye free pink sprinkles to hers, because why not?! We have been enjoying the muffins, sofa, and snuggles while we hopefully kiss this cold goodbye.
On a side note, I have been working on replacing items around the house to be less toxic. I need to replace these muffin tins with an option that is not coated in non-stick. It’s a process that takes time…
